Antifreeze does 3 things. It raises the boiling point and lowers the freezing point plus it protects the system from corrosion. For most climates a 50/50 mix of water and antifreeze works best. If you live in a hot climate you can use 60/40 mix and cold climates can use 40/60 mix.

I believe it also works as a lubricant for the internal moving parts of the cooling system. especially the water pump.
Also depends on the water pump. Some of the older water pumps benefited from coolant lubrication because the bearings were not sealed. Most newer water pumps have sealed bearings so they don't need lubricant. We have an electric water pump which is completely different than a belt driven mechanical pump, however lubrication might be even more important in this type of pump.
